But above all, the birth of a way of thinking capable of founding a culture and various societies in a vast incomparable movement of civil growth. To Rome and to its legacy, which influenced the birth of the modern idea of State, we have dedicated this wine.
This wine, produced with a careful selection of grapes, is the earnest expression of the territory, volcanic and Mediterranean, through the interpretation that the company has given to Rome Red D.O.C.. An elegant wine that is young, fruity and pleasant.
Matching: To be served with dishes containing meat sauce and entrées based on red meat and game.
50% Montepulciano, 35% Sangiovese, 15% Cabernet
Harvest Hand-picking allows a careful selection of the grapes. Harvest time is in the first or second decade of September for Sangiovese, the second decade of September and mid-October for Montepulciano.
The three grape varieties, vinified separtely, ferment and macerate for approximately twelve days in a traditional static vinification vat at controlled temperature, with repeated pumping over and punching down. The wine is aged in stainless steel tanks, during which the malolactic fermentation develops. After aging, the wine is bottled and left to sit for a few months.
Winey, intense and delicate.
Dry, sapid with a strong and harmonious tannin content.
